Noodle recipe:
Ingredients (for 1 serving, 210 g):
- 75 g (1 tablespoon).
- 2 g salt
- 90 g lukewarm water
Preparation
- Mix the salt into the lukewarm water, then add the 75 g of flour mix and mix with a spoon in quick strokes.
- Leave the noodles to rest for at least 10 minutes, during which time bring the salted water to the boil.
- When the water has boiled, turn the heat down to low, add the noodle dough (in the traditional way), then turn the heat up and bring the water to the boil (about 1-2 minutes). When the water comes back to the boil, turn the heat down again and cook for a further 1-2 minutes in simmering water, stirring occasionally.
- Finally, strain and rinse with cold water.
