Description
The flour mixture can be used to make gluten-free, dairy-free, egg-free, and oil-free sponge cakes.
We do not use any animal products in our products, which is why the Safi Free range is vegan without any contamination.

Buckwheat flour (40%), tapioca starch, millet flour, bulking agent (sodium bicarbonate), plantain seed husk flour, acidity regulator: citric acid, salt

Sponge cake (for 20 cm mould)
Ingredients:
- 250 g Safi Free buckwheat sponge cake flour mix.
- 15 g Safi Reform quadruple strength sugar substitute
- 30 g 100% lemon juice
- 200 g (2 dl) water
- (1 tsp vanilla flavour, grated zest of 1 lemon)
- 100 g apricot jam without added sugar
Preparation:
- Preheat the oven to 180°C, spray a cake tin (about 20 cm in diameter) with diet oil.
- Measure out the water into a bowl, then the lemon juice and jam, then add the sweetener/sugar and mix thoroughly.
- Finally, add the buckwheat sponge flour mixture and mix with a hand whisk in quick strokes until creamy, then pour the thick cream into the mould.
- Bake in a preheated oven at 180 degrees for about 25 minutes on the bottom-up baking function. (Baking time depends on the oven and cake tin, so TIME is important!)
Warning: since there are no eggs or baking powder in this sponge cake, it will only rise slightly, but it's still very nice to cut in half and fill with your favourite cake cream.
For non-egg-sensitive people, you can also make it with eggs!
Because the consistency of the sponge is the egg, egg-free sponge cake has a more dense texture than traditional sponge cake.
