Ingredients (for about 500 g loaf):

  • 270 g Safi Free homemade bread flour mix
  • 3 g Himalayan salt (may vary according to taste and salt)
  • 40 g freshly squeezed 100% lemon juice
  • 300 g lukewarm water
  • Seasonings to taste: dried garlic powder, onion powder, bread spice, seeds, etc.

Preparation:

  1. Mix the lemon juice, salt, and spices (optional) in the water then add the 270 grams of flour mixture and knead, then knead the dough (about 2 minutes).
  2. Let the dough rest for 5 minutes, then knead it on a floured surface (about 5 g of flour) (leaving a slightly floured surface).
  3. Brush the top of the bread with 1 g of coconut oil.
  4. Then let the bread rest for 20 minutes. Meanwhile, preheat the oven to 180°C.
  5. Bake in a preheated hot oven at 180 degrees for 50 minutes, then at 200 degrees for 20 minutes.
  6. Leave to cool on a wire rack before slicing.

If the bread is not fully baked:

If you have a weaker oven and you feel that the bread is not fully baked, do the following:

  1. Under no circumstances should you bake it in a loaf pan, and for this bread, not even in a strong oven!
  2. Do not bake it on a plastic silicone baking sheet under any circumstances.
  3. If it still feels wet after the above 2 points, add 15 grams of flour after washing your hands and shaping the bread. Knead the bread dough, then shape it and bake it like this!

This way the inside will definitely not be wet. I also recommend that you don't shape it into bread, but into rolls, buns or even small loaves!

Some important information about bread:

  • What it doesn't contain: gluten, milk, eggs, oil, yeast, sugar, corn, potatoes, rice, soy, seed flour, and it's made with VEGAN ingredients!
  • I've read more and more wild guesses as to why lemon juice is needed! The only correct answer is that it needs lemon juice because it makes it delicious! It takes away the characteristic flavour and colour of buckwheat, some people have tried it with organic apple cider vinegar and it's good. BUT DON'T LEAVE IT OUT! I can tell from the photo if someone has put less in. That's how much!
  • Our colleague Julika made it with organic apple cider vinegar by adding 50g of the apple cider vinegar and that much less water!
  • And as for the shelf life, it will keep for about 4 days at room temperature in summer, if you want to keep it longer, keep it in the fridge or freeze it (baked, sliced).
  • If you have a weaker oven, and you feel that half a kilo of bread will not bake through, form it into buns, rolls, root loaves - feedback says that it will bake perfectly even in the weakest gas oven.
  • Unfortunately, it cannot be made in a bread machine!
  • It can be seasoned to taste, e.g. with dried onions, garlic, seeds, bread spice mix!
