It is rich in dietary fibre, making it a worthy staple in a balanced diet.

Ingredients: Gluten free flours (millet flour, batata flour), tapioca starch, fibre blend (plantain hull meal, bamboo fibre), bulking agent (sodium bicarbonate), acidity regulator (citric acid).
The product may contain sesame seeds, mustard seeds, celery, nuts, sulphites!

Ingredients (for 10 pieces, 440 g):
- 150 g Safi Free Express flour mix
- 70 g Safi Reform powdered erythritol (or icing sugar).
- 0,5 g salt
- 10g freshly grated organic lemon zest
- 10 g apple cider vinegar (or freshly squeezed lemon juice)
- 140 g water
- + 5 g Safi Free Express flour mix for kneading
Filling:
- 35 g Safi Reform low-fat cocoa powder
- 50 g of Safi Reform poreritrite
- 60 g water
For spreading:
- 20 g liquid apricot jam without added sugar (if your jam is hard, dilute it with a little water and add sweetener)
At the end, for blowing:
- about 1 gram of oil
Preparation:
Knead the dough, then let it rest for 5 minutes, during which time prepare the cream.
You should get a very soft, almost liquid dough, but don't add any more flour, because it will be kneadable after resting.
Knead on a floured surface, then stretch the dough out into a rectangle, spread the thick cocoa cream on top and roll up from the narrowest side.
Cut into 10 pieces and spread with the liquid apricot jam.
Bake in a preheated oven at 160°C for 20-23 minutes (oven dependent) on the top and bottom racks, then spray with cooking spray and bake for a further 2 minutes.
Let cool on a wire rack and serve.
