I voted for the Safi Reform pizza, as it really is the best tasting pizza dough in my opinion, I usually make it egg free.

The results of this research are not real either. Many people don't know how heavenly pizza can be made from pastry flour, even egg free! I don't know of a tastier pizza, never had a single complaint about it, unlike #Safifree pizza flour (which not everyone likes because of the seasoning, although many people love it!)

Ingredients:

Gluten free flour blend (buckwheat flour, millet flour), tapioca starch, fibre blend (bamboo fibre, plantain seed husk flour), bulking agent (sodium bicarbonate), spice blend (oregano, basil, thyme, rosemary, marjoram, peppercorns, sage), salt, acidity regulator (citric acid).

Pizza recipe:

Ingredients (for 1 20 cm pizza):

  • 65 g + 5 g Safi Free pizza flour mix.
  • 5 g freshly squeezed lemon juice
  • 50 g lukewarm water

Preparation:

  1. Knead the lemon juice, water and 65 g flour mix together and leave to rest for 10 minutes.
  2. After resting, add enough flour to make a well-kneadable dough (about 5 g), knead the dough and finally, using floured hands, form a 20-22 cm pizza pan on greaseproof paper (which you will bake on), sprayed with oil (the greaseproof paper is important so that it doesn't stick to the poorer quality paper after baking)!
  3. Spread a thick layer of tomato sauce (so that it soaks into the dough while baking) and top with your favourite toppings.
  4. Bake in a preheated oven at 200°C for 10 minutes on the top and bottom racks, then at 180°C for 12 minutes.

If you want to add diet cheese (e.g. vegan cheese), add it in the last 5 minutes of the baking time.
