Safi Free reduced fibre GLUTEN-FREE VEGAN BREAD BREAD flour mix (for yeast bread) 1000 g
Recommended for people with complex food intolerances, as neither the flour mix nor the finished bread does not contain: gluten, milk, eggs, soya, oilseeds, pulses, maize, rice, potatoes.
It is also recommended for people with food intolerances who for some reason need to limit their fibre intake and cannot eat breads with a similar fibre content.
When determining the daily ration of bread, it is important to take into account the daily fibre intake prescribed by the individual doctor or adjusted to the individual intolerance level, and the fibre content of the bread as it is baked.

Suggested use
Ingredients (for 495 g bread):
300 g Safi Free Reduced fibre gluten-free vegan bread flour mix.
3 g powdered yeast
1 g baking soda
4 g salt
275 g lukewarm water
20 g freshly squeezed lemon juice
1 g oil to spray or brush the top (can be omitted!)
Preparation:
Dissolve the salt, yeast and baking soda in the lukewarm water, add the flour mixture and mix well with the spiral attachment of a food processor.
Using a spatula, pour the mixture into a loaf tin (or a silicone or oil-lined metal tin) about 12*21 cm
Smooth the top with a wet spatula.
Bake in a warm place (or oven at 50°C) for 40-50 minutes.
In the meantime, preheat the oven (but don't leave the bread in the oven in case you want to rise it there).
Finally, bake in a preheated oven at 210 degrees (bottom - top programme) for 55 minutes.
The crust is firm when removed from the oven, but it slices well later.
IMPORTANT NOTES:
- Use only freshly squeezed lemon juice, 100% lemon juice from the store is not suitable for this bread because the acidity of the fresh lemon is needed!
- Once the bread has cooled, it can be sliced and frozen. At room temperature it will quickly rise and be ready to eat again.
- Stored in a bag at room temperature, it will stay deliciously soft for days.
