Pancake recipe:
Ingredients (for 1 pancake):
(for 1 pancake (for 1 puff pastry)).
5 g erythritol (or dietary crystalline sweetener/sugar)
75 g water
Preparation:
Preheat a griddle.
Measure out the water, add the sugar/sweetener.
Add 40 g flour mixture.

(Fry without resting!)
Fry in a pan sprayed with oil, similar to a traditional pancake batter.
Note:
- Stir the pancake batter one at a time so it doesn't thicken while baking!
- Of course, you can also make a savoury version with a small pinch of salt (about 0.3 g!) instead of sweetener. Perfect tortilla substitute!
- Be careful not to get the pancake batter too hot, as this can cause tiny holes in the pancake batter!
